The Keeling Family's 'Simply Wholesome' Spinach-Stuffed Salmon with Fettuccine Pasta

The Keeling Family of Simply Wholesome, a health food store and restaurant serving Leimert Park since the 1980s, shares a quick and easy recipe for spinach-stuffed salmon with fettuccini pasta.

Simply Wholesome's Spinach-Stuffed Salmon with Fettuccine Pasta

Ingredients

  • 1 - 2 lbs salmon filet
  • 8 oz cream cheese
  • 1 cup chopped organic spinach
  • 2 tsp black pepper
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 2 tsp nutritional yeast powder (sold at Simply Wholesome)
  • 2 tsp calypso sauce (sold at Simply Wholesome)
  • 1 cup of heavy cream (sold at Simply Wholesome)
  • 1/2 cup of parmesan cheese
  • 8 - 10 sliced grape tomatoes
  • 10 - 15 organic spinach leaves
  • fettuccine pasta

Preparing the Salmon

  1. In a pot of boiling water, cook fettuccine noodles for 10-12 minutes
  2. In a medium-sized bowl, prepare the cream cheese filling by mixing together the cream cheese, chopped organic spinach, Italian seasoning, black pepper, onion powder and garlic powder.
  3. Gently cut the salmon in the middle, lengthwise, and stuff with the filet with cream cheese filling.
  4. Lightly season the salmon with nutritional yeast until it's completely covered.
  5. Sear the stuffed salmon in the pan with olive oil for about 2 - 4 minutes on each side
  6. Transfer to a new pan and bake for 8-10 minutes at 350 degrees

Making the Sauce

  1. Chop 8 - 10 grape tomatoes in halves.
  2. Roughly chop 1 cup of organic spinach
  3. In a small bowl, mix together the chopped grape tomatoes, organic spinach and minced garlic.
