The Keeling Family's 'Simply Wholesome' Spinach-Stuffed Salmon with Fettuccine Pasta

Simply Wholesome's Spinach-Stuffed Salmon with Fettuccine Pasta
Ingredients
- 1 - 2 lbs salmon filet
- 8 oz cream cheese
- 1 cup chopped organic spinach
- 2 tsp black pepper
- 2 tsp onion powder
- 2 tsp garlic powder
- 2 tsp nutritional yeast powder (sold at Simply Wholesome)
- 2 tsp calypso sauce (sold at Simply Wholesome)
- 1 cup of heavy cream (sold at Simply Wholesome)
- 1/2 cup of parmesan cheese
- 8 - 10 sliced grape tomatoes
- 10 - 15 organic spinach leaves
- fettuccine pasta
Preparing the Salmon
- In a pot of boiling water, cook fettuccine noodles for 10-12 minutes
- In a medium-sized bowl, prepare the cream cheese filling by mixing together the cream cheese, chopped organic spinach, Italian seasoning, black pepper, onion powder and garlic powder.
- Gently cut the salmon in the middle, lengthwise, and stuff with the filet with cream cheese filling.
- Lightly season the salmon with nutritional yeast until it's completely covered.
- Sear the stuffed salmon in the pan with olive oil for about 2 - 4 minutes on each side
- Transfer to a new pan and bake for 8-10 minutes at 350 degrees
Making the Sauce
- Chop 8 - 10 grape tomatoes in halves.
- Roughly chop 1 cup of organic spinach
- In a small bowl, mix together the chopped grape tomatoes, organic spinach and minced garlic.
