Saucy: Easy Homemade Gravy

Make your holiday dinner prep easy and delicious with this simple recipe for gravy. You can add a little wine or herbs such as sage or thyme. You can make this ahead of time and warm up right before dinner. You can even skip the turkey drippings, but what's gravy without the turkey?

Ingredients

2 sticks unsalted butter
1/4 cup flour
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Defatted turkey drippings plus chicken stock to make 2 cups

Instructions

1. For the turkey drippings: Deglaze your baking pan with chicken stock, pour the drippings in a clear dish and store in the refrigerator. After 20-30 minutes, take out, and spoon the fat (lighter in color) from the top of the liquid. Use a napkin or piece of white bread to soak up any remaining fat.

2. Heat a large (10- to 12-inch) sauté pan over medium heat. Melt down the butter, sprinkle the flour into the pan and whisk. Saute for 2 to 3 minutes. Add the hot chicken stock mixture cook uncovered for 4 to 5 minutes until thickened.
