Recipe: Winter Chestnut Puree

Here's a welcome post-holiday recipe: a wintry side dish courtesy of Chaya that's exceedingly simple and flavorful. You can find the slightly sweetened French chestnut spread in the international or specialty section at supermarkets or at most gourmet food shops.

Winter Chestnut Puree
Makes 8 to 10 servings

2 1/2 pounds sweet potatoes, peeled and cut into 2-inch cubes
1 8.75-ounce can chestnut spread
1 teaspoon salt

Place sweet potatoes in a large saucepan and cover with water. Bring to a boil over medium-high heat and then reduce heat to maintain a rolling boil for about 15 minutes until sweet potatoes are soft.

Drain water from sweet potatoes and mash well. Combine with chestnut spread. Season with salt, or to taste.
