Bolthouse Farms Recipe: Carrot Hummus

Bolthouse Farms is sponsoring a series of easy, delicious recipes by me for KCET Food! Using the Bakersfield-based company's carrot juice and their carrots, I came up with a delicious, addicting carrot hummus. I've been enjoying it -- by the pound, probably -- with rice crackers, but anything you'd use with regular hummus would be excellent, too!

Carrot Hummus
Makes approximately 3 cups

5-6 roasted Bolthouse Farms carrots
2 cloves garlic, peeled
1 ½ teaspoon each toasted ground cumin seeds and coriander seeds
1 teaspoon honey
¼ cup tahini
¼ cup olive oil
¼ cup Bolthouse Farms Carrot Juice
Juice of one orange
Juice of ½ lemon

Put all ingredients in food processor and puree until smooth. Salt and pepper to taste. (Try stirring a few spoonfuls into mashed potatoes for a colorful holiday side dish!)
